Castlevania looks awesome, but i just don't quite know which one to start with. Please stick with the DS ones, as all my points which would go to VC are booked for a while

Play them in the order they came out would be my advice.
Dawn of Sorrow Portrait of Ruin Order of Ecclesia
All three of them are superb, and I recommend getting them all. I enjoyed Dawn of Sorrow the most, but Order of Ecclesia was definitely the most challenging.

I'd agree with playing them in order, the presentation was definitely upped after DoS, so if you don't have to go back to the worse presentation, you won't be sad.
