Most are cool for me, but if I had to choose a select few I would go for Suicune, Groudon, Dialga, Victini, Virizion, Zekrom and Xerneas. Note that I've only played and am familiar with the first six generations of the core Pokémon series, so if you do mention Legendary and/or Mythical Pokémon from gen 7, 8 and 9, I may not know of them and would respond back, "Sorry, not to my knowledge."

I won't bore everyone with a complete breakdown, but Celebi is probably my favourite overall, followed by Manaphy (I must have a bias for sea angels as I love MarineAngemon from the Digimon series as well). I've always loved the legendary beasts from Gen II as well and they look great together.
The two new Regis introduced in The Crown Tundra are also really welcome additions, particularly Regidrago.
I was also thrilled to bits regarding Hoopa as it seems to be inspired by on Arab/Islamic mythology, particularly with the categorisation of the Confined form as the Mischief Pokémon and the Unbound Form explicitly as the Djinn Pokémon. I'm almost surprised that some form of controversy didn't surround it upon its reveal back in the day. In any case, if the Gen V remakes include Hoopa early enough in the game (similar to Manaphy/Mew/Jirachi in BD/SP), then I'll consider adding it to my team, even though I typically won't include legendaries among my mains.
