I hum along with the music, I just...enjoy that for some reason.
Also, I always find my hands trembling and myself hot after I beat something I've been having trouble with, like a goal with a time limit, or a hard boss.
When I'm really into a game, I'll add sound effects to the attacks. If it's a particularly powerful attack, I resort to a low "boooooaaaaahhhh" from the back of the throat. It totally gets me pumped!
Not really a habit, but my palms get sweaty whenever I'm playing a game and it's in a super high place. I'm personally scared of hights, but whenever I get that feeling, it's awesome.
My finished save is practically guaranteed to be Save File 2 (presuming the game has save files). I'll start on save file one, play for a bit, and then next time I pick up the game, I'll start a new file. I do the intro stuff again and then actually keep playing on that file. I especially like doing this in RPGs because I get to do all the intro stuff perfectly, not miss anything, get higher level/better equipment than first time, etc.
Also if I pick up a game I haven't played in a long time, I have to delete all existing saves first and start completely from scratch. Partly so I can unlock stuff again, partly because a completed save sitting there discourages me from wanting to bother playing it through.

Oh, that reminds me, with Zelda games, and ONLY ZELDA GAMES, I play through it once normally, then I do a "three hearts mission" on another file in which I play through the entire game without getting a heart piece or heart upgrade. It really adds a sense of thrill to the game!

Nobody trembles or gets hot after beating a hard boss? I'm all alone...
I definitely get hot (for lack of a better way of describing it) and a little trembly during/after a challenging part. Usually gets the heartbeat up a bit too -- which i suppose is what causes the body temp increase and trembles, if i remember my biology.
I also swear quite a bit, but more often i'll get into like "cartoon swearing" mode -- "rassum frassum raagha fragga" and such.
When playing the Grand Theft Auto games I wouldn't allow any civilian casualties. I would restart the entire mission if I accidently ran someone over. Also in Fire Emblem: Radiant Dawn I wouldn't allow any of the computer controlled allies to be killed, which in some of the missions was very hard to do.

I usually hum along with the music to the game I am playing. If its a racing game like Mario Kart for example I hum along with the engine noise which tends to bug people lol.
