While I'm sure that there's someone somewhere that firmly believes that we'll still see GameCube games on the Wii U (There was still a rabid nut around here that at least until very recently, not only insisted we'd see dual gamepad support on the Wii U, but claimed that Nintendo themselves had confirmed it was happening), it seems highly unlikely at such a late date.
If Nintendo wanted to bring anything from this library to the Wii U's Virtual Console, they'd of surely started a long while ago. At this point, I think we'd just be lucky to see this new every other week VC release schedule that NOA seems to be on for TG16 games and the like, be maintained through the year. Difficult to envision a new platform being added.
Wii U is out the door already, so I'll just write down GCN VC games that I want on Switch (if it's a possibility...)

Ideally I would want as many games as possible as the Gamecube pretty much made me a gamer from the age of 4 or 5.
But as for virtual console releases -
Super monkey ball 1 and 2 - Still is one of my favourite game series despite only liking 1 and LOVING 2.
Paper Mario: Thousand Year Door - An absolute classic to me, best the series has been.
Super Mario Sunshine - An HD remaster with gyro FLUDD controls would be amazing, but VC is good too!
Harvest Moon: Wonderful life - This series has had a decent VC support so a GC release would be good.
Twilight Princess/Wind Waker - Already had remasters but playing these on the go would be amazing!!!
Pokemon Colosseum/XD - If the VC comes soon, then these could fill the space until the next game??
Fire Emblem: Path of Radiance - Never got to play and would like to, that's all.
Pikmin 1 and 2 - If these were redone with pikmin 3 style visuals then good, but VC's an option too.
Viewtiful Joe - If there's a new switch release then I'd like to replay 1 and finally play 2.
MK:Double Dash - Classic GC game, another game that would be great on a portable.
Luigi's Mansion - Would prefer a remaster as I don't think it's aged well graphically but VC is likely.
Kirby Air Ride - Never played, looks amazing and would suit the switches multiplayer-ness!
Animal Crossing - One of my favourite games when I was younger, IDK how they would add the island...
Mario Sunshine, Pikmin 1 + 2, Star Fox Adventures, Mario Party 4-7, Mario Golf Toadstool Tour, Mario Power Tennis, F-ZERO GX, Melee (though I'd rather see a Deluxe port of SSB4), Wind Waker (again, rather have a port of the HD version), Twilight Princess (this time, I'd rather have the GC version), Pokemon Colosseum + XD

Cubivore (normally a Japan-only N64 game called Doubutso Bancho, and was ported to Gamecube and released in US as Cubivore.) Looks like a brutal Minecraft RPG where paperbox animals tear themselves apart with lots of purple paper blood. I always wanted this to get an EU release.
Instead EU got a Gamecube port of Doshin The Giant, which eased my pain at the time. Especially when Animal Crossing was released for the first time ever as well. These were my 3 Gamecube Rainfall games, and I'm still missing Cubivore.
Ikaruga (the one time I saw it I had no cash with me, the next day I went to grab it the game was gone. Forever).
Smuggler's Run (some Rockstar love)
PS. Chances are dead for any of them to be released on Wii U though, so I'm hoping for Switch.
