We have a regular switch, and the kids are always wanting to play, so we have thought about getting them both a lite for Christmas, but not sure how the game situation works. We mainly play mario kart and mario party with them.
Would we have to go out and buy 2 more copies of every game for them, or can 1 lite have mario kart in and the other lite play?
It's also important to note that Mario Kart 8 has split-screen co-op, but only for the standard switch. They could easily play together on one copy of the game if they do split-screen, and I believe the original switch is only 100 dollars more.

For the minority of games that support local wireless multiplayer, then a second copy will be necessary. Unlike the DS/3DS, there is no "Download Play" mechanism that allow multiple users to share a single copy of a game across consoles (there are a tiny number of games that support multiplayer with a single version of a game, but require everybody else to download a separate unit of software on a game-by-game basis).
In terms of sharing a single copy of a game though (assuming that you own physical copies of the aforementioned games), then the household can share that one copy as save data is stored on the console, not the cartridge itself.
If the children only play multiplayer games together, then I don't really see the need to buy a separate console for them. If they share a separate TV, then perhaps they can share a standard Switch together.

This options requires if 2 Switch Lite 2 separate games to play head to head. Otherwise if it was standard Switch they could play split screen on the TV itself. So two lite two games is how it's happens. There is no way around this either physical games or eShop games but remember NIN eShop can't use the same email address this requires separate NIN account to download or play eShop. So if you get to 2 Switch Lite make sure to make two separate accounts with different email registration.
There is a way to share digital copies of the same game with 2 consoles - we regularly do it with MK8 in our house.
Physical generally needs 2 copies though as others have mentioned - with the odd exception. Clubhouse Games is the only one I have that I can think of where you can use a second console with one copy of the game (needs a download on the second console).
Yes, a few games like Clubhouse Games and Wolfenstein New Blood allow you to download a “multiplayer companion” version that allows you play together without buying a second copy.
