On Switch it is rather hard to find something quality AND with a lot of content for below 10,00$/€.
Maybe you'd want to define "a lot of content"?

I cannot give any recommendations on the genres you named, but I played and liked the following rather cheap games:

Gonner (roguelike, pretty hard, jump'n'shoot or whatever)
Subspace Circular (Text based adventure, rather short, but very cheap)
The Bridge (Puzzle, great surrealist hand drawn style)
World of Goo (not really for me, but well-loved physics puzzler)
Human Ressource Machine (really (for me at least) difficult logic puzzler)
Little Inferno (more relaxing puzzler, that is not for everyone, but has a lot of charm)
Steamworld Dig (well loved metroidvania with digging and stuff)
Bulb Boy (was stopped by a bug, that is apparently fixed by now; interesting puzzle adventure)
Pan-Pan (didn't hear that much about it, but always positive stuff; am looking into it myself)
Xeodrifter (metroidvania)
Forma 8 (also)

I heard good things about, but do not own:
Morphite (looks rather cool, like a low poly version of Metroid Prime, probably? but currently still 12€)
Death Squared (Coop Puzzle)
Kingdom New Lands (currently reduced, strategical ...tower defensey....kingdombuilding simulator?)
Her Majesty's Spiffing (Point'n'Click adventure with loads of British humour)
Old Man's Journey (I think rather short and more of a graphic novel)
Bridge Constructor Portal (currently reduced, physics puzzler)
Warp Shift (Puzzle)
Toki Tori (puzzle platformer)
Kamiko (Zeldalike adventure, but rather short)
Shovel Knight: Specter of Torment (well loved rather hard platformer)
A Hole New World (rather hard platformer)
Blaster Master Zero (metroidvania with tanks?)

Never want to come down, never want to put my feet back down on the ground.
