Apologies for double post, but made meatloaf tonight. Having some baked sweet potato with it too, but it wasn't done yet, so waiting on it. It took awhile, so squeezed in some gaming, the classic PC dungeon crawler, Eye of the Beholder II. Ate the meatloaf, while the potato cooked longer.

@fighting_game_player they were perfect. Red yellow and green peppers, with some onion. Tons of Cilantro and lime with some tajin. Toasted tortillas as well. Tiny bit of shredded cheese and I mixed some sour cream and Sriracha for a sauce. Amazing.

Actually felt like cooking today. Beef tips in a southwestern gravy (brown gravy with added sautéed peppers, corn and black beans with chilies), sautéed spinach gomae, mashed potatoes and mac and cheese (made a cream sauce with four kinds of cheese and egg noodles instead of macaroni then baked with a panko crust ) and a side salad. Promptly fell asleep afterwards.

@NinChocolate Thank you, it's very good. The only thing I need to improve on is packing it tighter, so it doesn't crumble apart like that one piece did. BTW, that pico de gallo looks great!

For some reason that has reminded me of pkalia, although the only thing in common is spinach!

@Rambler after googling I suppose if I’d cooked the beef dish and spinach dish together it would be close but spinach gomae uses soy sauce and sesame seeds. Still I picked up a few pkalia recipes. I don’t think I have had Jewish food before. (Aside from going to a Jewish owned deli) So thank you.

@Ryu_Niiyama the only time I've made it (it takes an age) was a vegan version - just most ingredients apart from the meaty ones. Was excellent, so am minded to make it again soon.
Going to make Gomae next time I have some side vegetables

@WoomyNNYes I very much prefer egg sandwiches. Burritos are more a travel food.

Unless you count the act of using tortillas to accompany your breakfast as making burritos, though admittedly these usually end up in more of a taco shape.

@WoomyNNYes I’ve never made breakfast burritos, but I have made flour gorditas filled with chilaquiles, beans, cheese. As fine a breakfast as any!
