Made some home made Margherita pizzas tonight. Turned out way better than I thought it would. So good that I really over ate.

I recently picked up cooking and have learned most of my mother's recipes. She doesn't understand why I'm inconsistent with how well I make her dishes. It doesn't take a rocket scientist to know that a person who has only cooked for less than two years won't be as good or consistent as someone with 4 and a half decades of cooking experience. 😂

@Sunsy those food photos are great. Both dishes sound so warm and tasty 🤤. There’s a German cheese-noodle dish called Käsespätzle that like to make every now and then

@NinChocolate Thank you. They are, especially the goulash, it was perfect for a really cold winter day. That sounds nice. That's what I love about cooking, learning to make dishes and meals served around the world. One of my favorite things to make is chicken karaage. It's Japanese style fried chicken, it's great thanks to the chicken marinating all day.

On the menu tonight, homemade chicken tenders and Rice-A-Roni, just to have an easy side. I usually fry these, but I was low on cooking oil, so I tried baking them in the oven using canola spray on the baking sheet instead. They came out better than I expected them to.

@Sunsy good stuff. I made something similar but with pork chops and did fry them. Very tasty.

For various reasons I mostly cook middle Eastern, Chinese and indian dishes. I'm not great at not following recipes, but I make a mean mapu tofu, and some excellent (if I say so myself) coconut-based curries. And the best tabbouleh.

When I'm home alone, I can't justify erecting a mountain of dishes for little old me, so I mostly stick to simple/frozen dishes.

I did try making my favourite eggplant dish, but what should have taken only an hour took me maybe 5 hours to prepare, and it was bloody nauseating. I also couldn't bear to throw it out so I ate a little bit each day, dreading every morsel.

Cooking is definitely a lot of fun though and I would be more open to cooking if I have other members of the household or guests to prepare for.

Ironically enough, I did follow the chocolate mousse dish in Cooking Guide: Can't Decide What To Eat, and it turned out great. The presentation wasn't amazing (they looked like poo samples in cups), but I prepared some for Eid some years ago, and the feedback was good. I liked it anyway.

And there were only three ingredients: organic dark chocolate, granulated/caster sugar, and organic free range eggs. If I ever make it again (I've made it at least once before that), I'll want to add mint and avocado to it, and maybe less sugar than what was recommended.

@Silly_G making good food every time is hard. No less practice than anything else unfortunately. So I’ve been there eating leftovers I feel bad about lol

@NintendoByNature Thanks, I've done that before with pork. I think the only difference is I used panko breadcrumbs.

@Silly_G As someone who usually cooks by myself, it can be a lot of work for some recipes, but sometimes, it's really rewarding to make something from scratch. I usually cook for myself and my mother. A lot of the family recipes I learned from her, like the goulash and the lasagna.

I think I may make something frozen and simple tomorrow. As fun as cooking is, sometimes you want something simple to make on some nights.

@NinChocolate looks delicious. I've been wanting some Good Mexican food lately. Might get some tomorrow.

I ended up throwing some salmon and steak on the smoker tn. Salmon turned out well, the steak was so-so.
