I love Kirby games for how accessible and, (though it may sound strange) how relaxing they are!
Compared to something like Zelda or Metroid I mean. There are many points in both where you've really got to your mind, skills, reflexes etc. to the test just as they are designed.
Kirby is a great pallette cleanser for those types of games. Can they be challenging? Sure, but something about the general flow of the game just feels really nice. Perhaps it's the satisfaction of using an enemy's power to your advantage?
Hmm...maybe I'm more of a Kirby fan than I realised😅
In terms of the games I've played, I would say the 3 I have 'properly' played (as in not just dipped in to) would be the Crystal Shards, Planet Robobot and The Forgotten Land.
As for which one my favourite is, I'm really torn between PR and TFL...who knows, maybe another game will come along to take the crown!
I love KIRBY!!! my first game was triple deluxe on 3ds as it was my first console, although I didn't finish it (I sucked at kirby back then) I was hooked. I played a little planet robobot and the 3ds spin offs. Now I played star allies, kirby fighters 2, and most of the virtual console games.

I live how they are a mix between calming and challenges especially final bosses!

I love the concept of Kirby. The actual games are... hit or miss but some of them are very fun. Forgotten Land is definitely my favourite Kirby as well as one of my favourite overall games on Switch.
On Switch I also have Dreamland Deluxe which is fairly good and Dream Buffet which was fun and hilarious but unfortunately wasn't really supported for more than 2 minutes. I played the free game also (Super Clash?) and wasn't a fan. In terms of older games, some are fun but some are a smidge boring.
I'm always excited to see a new Kirby game regardless.
