I don't often double-dip. Off the top of my head, I do either repeatedly own or plan to own the following:
SteamWorld Dig - Wii U and 3DS SteamWorld Dig 2 - Switch and PC (As it was briefly free on Steam recently) A Link to the Past - GBA and SNES Classic Super Mario Kart - SNES Classic, N3DS VC Super Mario RPG: Legend of the Seven Stars - Wii U VC, SNES Classic Super Metroid - Same as above Earthbound - Same as above Super Mario World - Same as above Secret of Mana - SNES Classic, Collection of Mana Twilight Princess - Wii, Wii U Oracle of Ages - GBC, 3DS VC Super Mario 64 - Wii U VC, SM3DAS Super Mario Galaxy - Wii, SM3DAS Link's Awakening - 3DS VC, Switch, soon Zelda G&W The Legend of Zelda - 3DS VC, soon the Zelda G&W Zelda II: The Adventure of Link - Same as above Skyward Sword - Wii, eventually on Switch (Love the original, but I have such a backlog that this isn't high priority) Super Mario 3D World - Wii U, eventually on Switch (Same excuse as the above)
If we're counting Pokemon remakes: Pokemon Diamond - DS, Brilliant Diamond soon-ish Pokemon Ruby - GBA, 3DS (Omega Ruby) Pokemon Silver - GBC, DS (SoulSilver)
(LeafGreen would theoretically count too, but the original Green was Japan-only....I still own *Blue though)
One that used to count would be Assassin's Creed IV: Black Flag as I now own the Rebel Collection on Switch, but the trade-off is I sold the Wii U copy a few months ago.
Currently playing: Mario & Luigi: Bowser's Inside Story + Bowser Jr's Journey, Ys VIII: Lacrimosa of Dana (Switch)
