Can somebody please explain what these Flips are? Are they just books? Do you interact? Is it like choose your own adventure? I'm confused...

They're basically books for the DSi - there are interactive aspects to them such as clicking on character names for profiles and triggering sound effects, but there are no different paths to proceed down: it's a set story from start to end.
