That would make sense, but this is both Nintendo and the Virtual Console we're talking about here. Expect nothing from it is generally the best policy, because god knows they don't care about it.
N64 games for VC has already been teased, and do you really think that they are going to make a whole adapter for just one game? No, I think that Gamecube VC will happen.

Gamecube games on Virtual Console? HA!! That's wishful thinking. I really want to be wrong, but think about it: It took us a year and a half to get GBA games since they were announced. Nintendo still hasn't released any N64 games, and those were revealed LAST January, like January 2013, along with the GBA games. Not to mention DS games were announced at the investor meeting months ago, and we haven't heard a trace of development on that, either.
All this is to say Nintendo has a lot of catching up to do with their current promises. Announcing Gamecube games on VC, especially within the next year or so, is completely unrealistic at this point. In fact, it'd be surprising enough if I see the Wii U get anywhere near the same amount of N64 games the Wii got.

I hope they do a much better job with N64 than they did last time. It wasn't at all close to the real thing.
Gamecube I am not that bothered. (Most of the PAL stuff is 60hz and I already have it - Not like earlier stuff where import duty can make it really expensive).

Nintendo will just do whatever seems least logical or they'll choose a cynical way to get the die-hards to re-re-repurchase games. Gamecube games might do ok on Wii U VC and we know the Wii U can run Gamecube games in Wii Mode with a softmod but without GC Memory Card slots it would seem like there are a few extra hurdles to make it work.
I also don't think Nintendo could look at the 2 Million Wind Waker HD sales without thinking; 'there's another 25 games we could do this for'. In fact they should have already been releasing one Gamecube remaster per month if they aren't releasing anything else. My vote for the next one would be Geist followed by something I've never played like Baten Kaitos but I know Nintendo will opt for games I still own like Luigi's Mansion.
