Because the FX Chip is proprietary and not owned by Nintendo maybe? You don't see Yoshi's Island on the VC either.
You are not the only one that enjoys it. Those of that like it have a SNES and an original cartridge already because there are no signs this is ever coming for download.
I'd really like translated versions of all those Japan only Fire Emblem games. Even the ones that would be excruciating by comparison to the modern ones.

They could make some cool updates on Mario Paint and release it...though sadly I don't think they will ever happen.

I'd like to see some Gamecube games but particularly Eternal Darkness: Sanity's Requiem and Mario Kart DD, Smash Bros Brawl and Mario Sunshine.
From the N64 I can only think of Donkey Kong Country 64.
I also want to see Earthbound! I've not really been bothered by it, but listening to all the hype around it and such, I'm actually intrigued and I want to try it out! Maybe it's translation issues?
I'd also like to see some more Castlevania games, like the Genesis/Mega Drive one, Vampires Kiss and Castlevania64! Seriously, why did they stop at Castlevania X?

Of course that's not including the Wii VC ports too. Some I'll buy, some I won't. Faxanadu I'll definitely buy even if they make it full price again!
