The mic games might actually be really dated by now. Plus we have updated ones from MPDS, Island Tour and MP10 and everyone got angry about it.

Definitely Mario Party 5. It's my favorite Mario Party as a matter of fact. One of the reason is the fact that the boards were really 3D for the first time in the franchise, and not just some basic-looking board like in Mario Party 4. Plus, I was getting better, more independent at playing video games so this MP was the first one my parents didn't have to let me win/help me out in minigames. Furthermore, you could play as two of my favorite Mario characters for the first time, Boo and Bowser jr. (yeah, I couldn't differentiate between Junior and Koopa Kid at that point in time).

I like 4 cuz it feels the most like the N64 games and 5 felt uninspired. 6 however is my personal favourite. The boards seemed to come alive and were all unique. Also the single player seemed slightly better than the others, the day and night function opened the gameplay up significantly and the minigames were more fun. 7 was also fun and I prefer 7 to 4 but my favourite is definitely 6! I had the mic too but always had it off... it just seemed weird...

I'm not fond of the later Gamecube Mario Party games (5 had a painfully generic theme outside of the Star Spirits, and too many luck based mini games), but 4 is probably my recommendation here. Still fun, and arguably still feels like a Mario game, even if it doesn't reach the heights of the first three.
