So I'm curious to ask, what control setup can work for VC titles? Can I play N64 and DS games with a Wii remote & nunchuck? Or can I play GBA games Wii controller plus?

All NES games support the Wii remote, you just hold it sideways.

The following controllers are capable per system...
NES - Wii U Gamepad, Wii Remote, Classic Controller, Wii U Pro Controller
NES (Light Gun) - Wii Remote only
SNES - Wii U Gamepad, Wii Remote(1), Classic Controller, Wii U Pro Controller
N64 - Wii U Gamepad, Classic Controller, Wii U Pro Controller
GBA - Wii U Gamepad, Classic Controller, Wii U Pro Controller
DS - Wii U Gamepad only

1 = You may use the Wii Remote, however, considering that the Wii Remote has fewer buttons than that of the original SNES controller, you may need to configure the buttons manually, and some games may not be playable with just the Wii Remote due to the lack of buttons. A Classic Controller or Wii U Pro Controller is strongly advised for SNES games.

I don't think that any VC games are compatible with the Nunchuk accessory.
