I like Shy Guy Falls, when you fall in the water the camera lens gets wet. Plus you see the condor's nests and realize you are going down the waterfall.
But I also like Electrodome, Toad Harbour and Mount Wario.
I will comment in this thread, never being able to find it again.
I could whistle along with Sherbert Land all day. It is also a endearingly fair and versatile track with just enough variation to excel in both multiplayer and Time Trials. Is it my favorite? Hell if I know, but there is very little that I don't love about it.
This is a tough choice, as I think they did an amazing job with most of the courses (old and new) but for the sake of this thread lets go with....
Bowser's Castle. The atmostphere here is just epic. From the view of the castle at the start, to the giant Bowser like monster crushing the course, to the awesome music. Very cool.
As tough as choosing a new course was, I really can't decide with a retro favorite. Maybe Royal Raceway. Maybe not. As I go through the list I keep changing my mind!

Tough choice between Mount Wario and Toad Harbour. But I guess I'll go with Mount Wario for being a marathon track.
Funny enough, I don't really like any of the retro tracks.
