What is it with the Star Fox/F-Zero series anyway? Are they not very popular? Miyamoto even said that he didn't think many people cared for F-Zero for example. And yet every time a new Direct approaches with the possibility of a new game reveal practically everyone here wishes for Star Fox/F-Zero. But I'm guessing that's just within the main Nintendo community and the vast majority don't really know about or care for either franchise?

basically. And to be honest, I kinda understand why. Star Fox has fallen to simultaneously deserved yet undeserved criticism for 3 games in a row after 64 and F-Zero GX was the 3rd best selling 1st party racing game on the GCN in 2003. And also is a series not named after the main character, who is best known for Smash Bros. And doesn't have the rabid fanbase like Ness to make up for that.
Even ignoring that, I wouldn't be too surprised if not a lot of people at Nintendo care about F-Zero. Which is a shame, as the world could use more high speed futuristic racing titles.
Not to mention Nintendo needing their more obvious series to sell systems more than ever while also still trying to give new IPs like Xenoblade and Wonderful 101. And finally releasing a new Pikmin. Yeah, it's really not surprising there is a lack of new games in this series. And even in terms of sci-fi Nintendo game, Metroid will most likely always be more popular anyway.

I think with F-Zero it's like with Earthbound - everyone knows it thanks to Smash Bros. and word of mouth, but not many actually got to play it...
Star Fox, though, the sales went down steadily after 64. Granted, a lot of people would argue that the series' quality went downhill after 64, but still...
I think StarFox has more appeal than F-Zero. Even Metroid is kind of in the same boat. When the GCN games of the series were new, no one really cared. Now, 8-10 years later, everyone wants a new one...
These games were top of the line back in 6th gen, which is exactly why I opted for GCN back then.
Really, StarFox could be Nintendo's 3rd person shooter while Metroid continues to be Nintendo's FPS/A. F-Zero would probably be best on 3DS, though, because Mario Kart 8 won't be there, and Mario Kart 7 doesn't have gravity mechanics. Who knows what Nintendo will do, though.

The fact that KIRBY is getting a 3DS game is kinda assuring me that we're getting a new Star Fox and/or Metroid game for 3DS and/or Wii U.

Yes. It had a lot of games that not a lot of people played. That's why it's called "underrated".
Popularity increased for entertainment beyond their initial release is not exactly uncommon (though I feel GCN being completely ignored is a false statement, some of those early releases especially did quite well for themselves)

I think you've got it backwards. If anything, Metroid is Nintendo's Mass Effect, and Star Fox is their Halo... maybe that's just me though. Like I said, I can easily imagine Fox stepping into a Ratchet and Clank-like title.
Metroid Prime was one of the biggest hits on the GameCube, one of the most acclaimed games on the system, and was a title that gamers had been asking for for years before. Metroid Prime was a big deal a decade ago.
Metroid Prime 3 was basically ignored, though.
I just find it interesting that everyone wants all the games that they criticised all those years ago when they were playing PS or Xbox. Even Xbox had the better versions of alot of PS2 games, yet PS2 was more popular. In reality, Xbox was the best 6th gen machine, besides exclusives on the other systems.
