@Blast: Well I care to an extent. It'd be kind of nice to be able to buy just one system instead of 2 just so you have a system for a specific set of games. Multiplatform gaming is not a cheap hobby.

I can't speak for everyone, but I am getting Zelda U regardless of the release date, so the delay from holiday release doesn't really affect me that much.

Unless Zelda U is the next OOT, I'm confused on why this matters. Like it's disappointing certainly, but I am long past the point where 2 games being delayed is that relevant. 2 games is less than the amount of games that come out on Steam on a daily basis. Sometimes good games even.
Like I'm confused on how limited your interest in gaming is when you would be unable to find worthwhile games because 2 games were delayed. I mean, I don't own Mario Maker yet but I'm still playing video games shockingly.

2 is less than the amount of unplayed and critically aclaimed AAA games I have in my Steam Library that I have personally put in a category titled SHOULD BEAT
What now? I'll be playing a lot of games this end of the year. I don't get how anyone would be complaining, there are a lot of good games on the console.
Yep, it just means I can try to catch-up on my backlog, which is only expanding thanks to my recent purchase of a PS3 Super Slim. Of course it helps that my tastes tend towards pick-up-and-play games, but I'm doubtful I'll get through my Zelda games before Zelda U or a replay of Xenoblade Chronicles before Xenoblade Chronicles X. Nintendo could bankrupt tomorrow and I doubt I'd notice for a few years to be honest!
My most wanted games are Fatal Frame and Xenoblade Chronicles X; so the Star Fox delay isn't a problem for me. Having Star Fox and Zelda for 2016 gives the Wiii U a better final year too (as I expect it'll be superseded by NX in 2017).
As for system sales, I doubt that Star Fox would push that many units, so Nintendo will be relying on their perennials like Super Mario Maker, Mario Kart 8, Smash Bros etc as an accumulative reason to have a Wii U.
Now looking back two months later it looks like the U will surpass my expectations ( with the great bundle deals 250.00 with Splatoon and mario kart 8 and the number 1 sales at target.com for black friday_ I think their best bet will keep the price down throughout due to lack luster holiday lineup of new games( with the exception of xenoblade!).
