I hope they'll leave the Galaxy games behind, they were so boring to play. If it comes to remakes, I'd prefer Sunshine a lot. But I'd like to see Nintendo make an actual 2D Mario game with sprites, after all this time. They haven't done anything fully 2D in an eternity.

As someone who completes these games 100%, Sunshine was easily the least enjoyable to play.
Admittedly, almost every 3D Mario game is obnoxious with its 100% goal, and Sunshine was probably the worst offender with all the blue coins. But on the other hand, the whole "finish the game twice/thrice" scheme from the Galaxy games was poorly implemented, as well. Not to speak of the unvelievable pain of finishing Super Mario 3D World five goshdern freaking times if you're playing alone, once with each character.
But what Sunshine did much better than the other 3D Mario games is to leave the main mechanic (F.L.U.D.D.) in your hands, meaning you could use it however you like, while appointing targets and challenges which require it in various ways. Most other 3D Mario games put a bit more emphasis on pure platforming without doing anything to allow experimenting freely, instead streamlining your experience entirely (except for 3D World with the Cat Suit).

I never had a problem with the blue coins.. I guess that's what you get for growing up with N64 platformers. From a platformer perspective, Sunshine was brilliant, you cannot deny that. That being said, I don't think they should return to either Sunhine or Galaxy, I'd rather see a new game in the vein of 64/Sunshine.
3D World is the only one I haven't played, so I won't comment on that. Finishing SMG and SM3DL more than once and going after the green stars in SMG2 was a little obnoxious, but I already felt like I had gotten my money's worth by that point. I can't really say the same about Sunshine when the game is deceptively linear (the game looks open at first, but it's always the same shines required to beat the game), still keeps the 100 coin missions (I'm not really bothered about them being in Galaxy because they were slightly improved), and has so many blue coins in addition to several red coin missions. By no means do I think Sunshine is bad (I wouldn't mind a sequel being made if they could improve on the first one), but I certainly wouldn't go after all 120 shines on a repeated playthrough.

I'm still waiting for Super Mario 128 to show up. Though maybe it's up to Super Mario 256 now. Or is it 512? Wait, I know, Super Mario 9,001. Because it's over 9000!!!

Honestly, I want them to build on Super Mario 64 in the sense that they give us big levels to play around in, and tons of ways to approach each star.
Super Mario 64 remains my top 3D Mario for that reason, it felt so ambitious in how it approached gameplay for the Mario series. Not to mention, levels felt like more then just course to run through. They felt like virtual playgrounds full of stuff to do and discover. The 3D Mario games since have been fun, but they lacked the magic that make 64 so awesome and groundbreaking back in the day.
Forget a sequel to Sunshine or Galaxy. I want the true sequel to Super Mario 64, one that takes its ideas but builds on them with the power of the Wii U helping make it possible.

Problem is, they already made a sequel to Super Mario 64. It's called Banjo Kazooie.
