it's fine for Mario Kart, and I can't blame Nintendo for not risking their cash cow with risky ideas (well I can, but not for this type of risky idea at least)

It isn't, other games already demonstrated this functionality working fine, such as CALL OF DUTY with 60fps split screen and with options to turn it off!

Donkey Kong I can understand though.

I feel Nintendo's pains with modern Nintendo fans: screwed if you do; screwed if you don't.

1. First it's "Nintendo NEEDS to use the Gamepad, they need to use its features and show it off!". Several games make use of the Gamepad's features in early games, including Nintendo's own. Nintendo Land, NSMBU, and Pikmin 3 all make decent use of the Gamepad.

2. Then it's "Nintendo NEEDS to get rid of the Gamepad, I don't want to be forced to use it". SM3DW reduces Gamepad usage requirement, and DKC:TF doesn't use it at all for anything other than off-TV play. Nintendo puts Mario Kart 8 somewhere in the middle, using the Gamepad for non-integral features. The complaint cycle returns to step 1.

Seriously, people?!

Exactly. People have no clue as to what they want. Oh, and their also giant hypocrites apparently.

Anyway, I liked the little mini map display on the bottom screen in MK DS and MK7. Shows you who is where and what item they have. Pretty useful.

This reminds me, this causes the GamePad player to have an unfair advantage because they can spy on other player's items. Double screen could actually prevent this!

Donkey Kong I can understand though.

From my experience Call of Duty Wii U multiplayer set to dual screen reduces the frame rate to 30fps per screen give or take.

I am going to assume that separate displays would have had a huge impact on the frame rate if Mario Kart 8 is pushing the Wii U hardware of course.
