It's probably easier on your own. I mean, I've played it with one player, two players, and three players, and the more players the more deaths that seem to happen, as we just start crashing into each other and accidentally (or purposely) killing each other.
Of course, multiplayer is more fun in my opinion, but single player is plenty easy.

I have to agree NSMBU is fun multiplayer but really shines in single player. I enjoy watching cable on the tv, while playing away on the wii u gamepad at the same time
