Gamepad at first, but I have been using Wiimote+Nunchuck almost all the time I played Mario Kart Wii, so I still have to decide which I'll use mainly. Doing a little flick to do tricks and wheelies wasn't that bad to be honest in Mario Kart Wii. I'll buy a Pro Controller eventually, but I haven't seen a game worth buying one for yet.
My favorite way to play Mario Kart Wii was using the Wiimote+nunchuk so I will probably use that. I will definitely try it with my pro controller, and the gamepad (dual analog sticks) as well.
Considering I have basically everything, I'm going to try them all.
I won't lie, I had the most FUN playing MKWii with the steering wheel. However, I had the most PRECISION using the Gamecube controller.
I will most likely use the wheel when I am having fun and friends over (or have them use the wheel), and use the Gamepad/Pro controller when playing online for precision
Pro Controller for me. I'll give the other control schemes a try also, but Pro Controller will definitely my main control method. I'm not a big fan of motion controls.
Gamepad motion control. I feel more into the game when I can make real life gestures.

Wii Wheel all the way: I like it with Excite Bots (Japanese release - no PAL release, boooooooo!) and Need for Speed U. Lego City has the only stick-driven driving in my house!
I played Mario Kart Wii exclusively with the Wii Wheel
Got to 9999 VR, and had a golden wheel emblem with three stars
I think I'm just going to stick with traditional controls this time around (so the pro controller in other words) because I've had enough of tilting my Wii remote back and fourth lol
Although when I played a demo of MK8, the motion controls are much better with the gamepad and Wii remote plus when compared to MKWii, since they have a greater degree of accuracy
