The game requires 2 buttons, has very atmospheric and chill audio (gets more complex the better you do), and addictive gameplay. If you don't relax and take your time, you don't do well.
I'd go for Do Re Mi Fantasy or Kirby's Dream Course. Both are pretty chilled out games. Do Re MI is a platformer but really laid back with a gentle difficulty curve and really ambient relaxing music. Kirby is more than crazy golf and becomes more like a puzzle game the farther you get ,plus you get all the time in the world to take your shot, cool graphics and music too. Hope that helps.

I came here to post this exact same thing. Great minds, man.
EDIT: Regarding VC, Kirby's Adventure has a calming effect on me. Mainly because it's so easy, but also so much fun, that it's a pleasure to just sit and play the thing end to end. Which I used to do many times when I was younger. (In fact I'd mute the TV and listen to the radio or something instead...though playing it now I have no idea why I did that...the music was great!)
So, yeah, if you need a relaxing and gorgeous experience, go Orbient. If, for some reason, you're limiting yourself to the VC, Kirby's Adventure.
Relaxing games are more to be found on WiiWare. If you're open to that, then go for Let's Catch or Reel Fishing Challenge. They're part of the more relaxing games yet.
I found SimEarth to be pretty chilling. I mean, there's much to do, but when it's done there are just times you watch your planet grow, change and prosper.
And it's great to chill to Donkey Kong Country (1) music, especially the underwater tune.
