Is it the great Ayako Saso? Or Nobuyoshi Sano? Or Masami Ueda? Or Hiroki Kikuta? Or Yoko Shimomura? Or Nobuo Uematsu? Or Yuzo Koshiro? Or David Wise? Or Bobby Prince? Or....Koji Kondo?
I go for Namco's all-time great Sampling Masters which consists of Shinji Hosoe Ayako Saso, Nobuyoshi Sano and Takayuki Aihara
To be serious, I really don't care much for 8 bit chiptunes and especially don't care to look up who composed them. It wasn't until at least the 16 bit generation where the technology was good enough for video game music to stand out enough to really matter, in my opinion.
Ash: Professor Oak, how's your Bulbasaur?
Prof. Oak: Oh, it only hurts when I sit.
...
Prof. Oak: It's only Chansey if Krabby won't let go. Bye, now.
Ash: I don't think I'm going to call him anymore.

Hmm, a tough choice. I don't think I can choose just one. Koji Kondo, Nobuo Uematsu, Yasunori Mitsuda, Hitoshi Sakimoto, Kumi Tanioka, Grant Kirkhope
...does it still count if they're still composing today? I'm pretty sure almost all of those composers still do at least a little work for video games, besides Grant Kirkhope, I think.
@NintyFan thumbs up! I was unaware about his work on Donkey Kong, I'll try to listen to some of the game's tunes on YouTube after posting. Koji Kondo is such a legend as well, just browsing through his discography I recognized some of the games with most memorable soundtracks I can remember. Still, Super Metroid takes the gold medal, in my opinion.

@ BulbasaurusRex Don't care for 8-bit chiptunes? Not even the music from classic Mega man, Ninja Gaiden, Castlevania or so many other awesome Nes soundtracks? How did those not stand out or matter? If you weren't alive yet I'll forgive you but If you were how dare you.

Rob Hubbard is good. Anyone who can make me put Commodore 64 music onto my playlist despite me never having played the game has got to be worth mentioning.
Edgey, Gumshoe, Godot, Sissel, Larry, then Mia, Franziska, Maggie, Kay and Lynne.
I'm throwing my money at the screen but nothing happens!
