Instead of listing them on the chatroom, I'll list what I consider to be remakes here. Let me know whether you agree with them.
SLIGHT REMAKE Ocarina of Time Master Quest- dungeons are remixed Banjo-Kazooie 360- new controls
ENHANCED REMAKE Link's Awakening DX- printer support, color, new dungeon Super Mario 64 DS- new controls, new features, new characters Ocarina of Time 3D- new controls, new features, better sound, better graphics, stereocopic 3D Star Fox 64 3D- new controls, better sound, new features, better graphics, stereoscopic 3D Diddy Kong Racing DS- new controls, new features, new voices, new characters Conker: Live and Reloaded- new controls, new features Super Mario All-Stars- better graphics, new features Super Mario Advance series- better graphics, new features, voice acting Sonic Adventure DX- new features A Link to the Past- new features, voice acting Four Swords AE- single player, new stages
FULL REMAKE Pokemon Fire Red and Leaf Green- fully updated graphics, fully updated pokedex, new features, better sound, color, new locations, new characters Pokemon Heart Gold and Soul Silver- same as Fire Red and Leaf Green Turtles In Time Re-Shelled- new graphics, new controls, new features Mario Bros. GBA- better graphics, new enemies
A re-make is when a game is completely re-made, most likely using the original game as inspiration. If it is a re-boot in the series, I will likely stay close to the original format, but there will be little new material in the game.
A port is when a game is ported from one system to another. An enhanced port is when it is ported with some things changed.

I wouldn't class any of those games as remakes - they're all pretty much improved ports to take advantage of improved technology. I'd class the following as remakes, however:
Resident Evil (GameCube) Metal Gear Solid: The Twin Snakes (GameCube) Silent Hill Shattered Memories (Wii) Tomb Raider Anniversary (Wii) Goldeneye (Wii)
The only one that really counts are Master Quest (if were talking about the first one released), and the pokemon games, more FireRed and LeafGreen rather than HG & SS.
