In the two Years since you sold your Xbox 360, they changed the interface twice and brought out a new controller which is better for fighting games. Still, I agree that the Xbox has far less variety in its exclusives, and that's why I want a PS3. I'll never get rid of my Xbox, though, since it has Mark of the Wolves and The King of Fighters 2002: Unlimited Match.
As for games that I want for the PS3:

It's true Project Natal has been watered down for the retail version (i.e., Kinect). I'm probably the only one who's bummed it no longer reads sign language, but it can still recognize faces and identify hand gestures--that's pretty impressive. IGN seems upset about it, but they don't have much to complain about. If the Wii is any indication, developers weren't/aren't going to take full advantage of the available motion controls anyway. In other words, you won't be able to see the difference--you'll just know it.
How do I know I'm missing out on something if I don't know I'm missing out? What I mean is once I discover a game that looks interesting to me (new or old) I hunt it down, purchase it, play it, if I don't like it resell it.
I wish I hadn't missed out on the 80s and 90s. Sure, there's VC and everything (hopefully the next Nintendo console will have VC because I don't have a Wii) but I won't get that nostalgia. Oh well.

Yeah, like LuWiigi said, that's far easier said than done. Not everyone has the time or budget to track down every game that interests them. For instance I want the vast majority of PSX JRPGs, many of which are over $30 used for a copy that barely works. I also wish I hadn't missed out on the Sega Saturn, Skies of Arcadia, Shin Megami Tensei: Devil Summoner 2, Ninja Five-O, Shining Soul II, Grim Grimoire, and a bunch of other games that I wish I could get but likely never will, or at least, it won't come easily.
Paper Mario and Mario & Luigi: Superstar Saga. I remember seeing those two in the store but I never got around to getting them. Thankfully Paper Mario was released on the VC so I was able to get that one but I still need to get a hold of Superstar Saga. I've heard great things about that one.

I don't really regret missing anything because I know of a few stores where I live that stock pile old games. If there is any game I want I can find it.
Final Fantasy VII and Streets of Rage II (at the time), bought SOR2 in the early 00's and never regretted it.
I also discovered Chrono Trigger through a Friend's pirated Playstation Disc through SNES emulations...saw the beginning and thought "Definately getting that!" then I found out it was US only...so I emulated but never finished it...until the DS version came out.
Has nobody missed out on the Dreamcast? I loved that machine. Owned at least 40 games and only remember there being a couple that weren't AWESOME! Jet Grind Radio? Power Stone? Ooga Booga? Toy Commander?
