Hexagon Heat (Mushroom Mix-Up, but faster!) Platform Peril (MP2)(The more extreme version of the first one) Bobsled Run (MP2) (I forget which version was better, I think 2 had the better, dangerous one.) Lights Out Saber Swipes (Pirate Land duel game)
MP2 was the best one by far, it took the best games from the original, added some great new ones, added depth to the boards without go stupid overboard like many of the later games.
There's a ton of great Mario Party games, and I can't remember many of them, so I'll list mini games from anything BUT MP.
PDA Game - Alien Hominid Longer than the actual game itself, and insanely fun with 4 players. Basically you're a stick figure and you must make it from your starting point, to the end through a single-screen puzzle filled room. With 1 or 2 players, it's pretty easy and kinda boring, but with 3 or 4 it's some of the best fun available. You can also make your own levels.
King Dedede Brawl (or something like that) - Kirby Air Ride You have to take down King Dedede using various powerups while he drives around the arena smacking you with his hammer. He's a bi#@$ to take down, and it's great to see all the players driving around furiously trying to kill him and avoiding all the crazy crap flying around.
Man Darts - MadWorld You smack dudes into a dart board with a baseball bat. Do I really need another reason?
Coin Launching Game - Super Smash Bros Brawl Kind of like a shmup. It's really addicting, and I have to force myself to stop playing
Duck Hunt - Wario Ware DIY Duh, it's duck hunt.
The best strategy in the game: go up stairs and pause balls.
