I'd love to see a revival of PLOK, but the Pickford brothers don't seem too motivated lately (even the webcomic is inactive). Other than that, defintely StarFox and F-Zero!
Billy Hatcher ought to get a sequel. That game had brilliant ideas, but the execution didn't quite live up to them—a sequel would rectify that.
I agree Billy Hatcher could come good with a sequel (although he was in the first Sonic & Sega All-Stars Racing but not the sequel which might not be a good sign...)
I'm not sure they'd quite count as retro revivals but a modern F-Zero and Star Fox (in the gameplay style of 64 but muuuuch longer) would be top of my list. For a proper revival, I'll go with Alex Kidd, at the very least for the music!
