I had a couple of questions regarding the lockout chip and pal A and B.
For starters, are there any big risks to disabling this?
Also how can I see what pal type my NES is? Some of my games show a letter but not all of them so how do I know what is what?

Possibly you could determine the region by the country code (NES-xx-yyy, where xx is the game code and yyy is the country code)? Weren't those consistently printed on the label?
From what I read, PAL-A was UK (UKV/GBR), Australia (AUS) and Italy (ITA). Other countries should be PAL-B.
Otherwise if neither you'd have to open the cart and look at the label on the CIC chip ("3195A" seems indicate a PAL-B and "3197A" indicates a A cart).
And I assume that if the games that can be defined as Pal-B are playable on this console then it would be a Pal-B console? Because I read that there should be "Mattel version" or "NES version" on the topdoor but neither are there.
Correct. PAL A consoles had NES (not Nintendo Entertainment System) or Mattel on the doorflap. And yes, a PAL B console will only play PAL B cartridges. That is the 100% certain way to determine what type you have.
And all cartridge labels should be clearly marked with an A or B but some early games don't seem to have them (black label games like Mario Bros, and Gyromite).
