I'd have to say Super Castlevania IV, easily. Rondo of Blood is great, but Super had the best controls and the music was amazing, it gave off the perfect mood for the game. I also like the original gothic theme over the anime theme that Rondo of Blood used.
Rondo of Blood is the best no question but the original NES game wins with me even though it is quite poor in comparison. I enjoy Super Castlevania IV but something doesn't look/feel/sound right about it so it can't win with me.
