Super Smash Bros. Melee (Pichu ftw!) That was my second fighter ever that I know of. After that would be MvC3 and then Guilty Gear. (not sure which one it was of the series though >.< )
Super Smash Bros. Brawl, Jump SuperStars, and One Piece Unlimited Adventure are the only ones I can think of, but that's due to their really simple controls.
The Soul Calibur series is okay I guess. And while I normally don't go for that kind of game, the demo I tried of the newest mortal combat is enticing. It actually seems like even I could play it.
I don't always give myself signatures, but when I do, you just read it.
Really, I tend to avoid the fighting genre because so many of them seem the same to me.
It's one reason I prefer Super Smash Bros. Brawl if I'll have to pick a fighting game. That, and it's extremely fun, I really have to say Brawl is my ultimately favorite fighter. Always lookin' for people to play with, so if anyone wants to Brawl here, lemme know!
On topic of what people consider "real fighters", though, I gotta say I used to really love the Marvel VS Capcom series ( most notably the first one ), but I've long since grown out of it. Tatsunoko VS Capcom comes at being my favorite "real" fighter, though I play it casually.

Street Fighter II: Champion Edition (Hyper Fighting goes too fast for me to strategize, LOL). Playing it for the first time at a 7-11 was just magical. I guess setting low standards after original Street Fighter helped. Then, this set a new high standard for all games!

have you played soulcalibur 2 that had link in it? it was released on the gamecube a couple of years back
