It looks like Resident Evil 0, 1, 2, 3, 4, and Code Veronica all came out for the gamecube. Which is the best? (aside from 4, I'll take the Wii version thank you very much) Which ones have pre-rendered backgrounds? Does that hurt the gameplay at all? Do they all have tank controls?
I'd have to say the REmake. RE 4 is really good also. Either one is great. Code Veronica wasn't bad either and it's probably the longest in the entire series.

REmake is great. 0 and Code Veronica are a bit slower, and 3 is less scary and more action-oriented. It's all about the type of game you want - if you're looking for creeps, try 1, 2 or 0, with the knowledge that 2 is a port of a PSX game and thus looks more dated than the others. 3 and CVX are ports as well. And 1 is probably the most complex and vast of the bunch.
0 and 1, I know 4 was good, but wasn't as scary, just more, ahh CRAP! SO MANY DUDES! RUNNNN! While 1 and 0 were, oh god, the leech zombie music, where is he?!?!? Turns corner WHIP! OH GOD RUN! bam bam CRAP HE'S EXPLODING OH GOD!!! or an example from 1, Doo doo doo, walking thru this lame hallway, window breaks OH SH*T DOGS! DIIIEEEE! AAHHHHH!
As well Resident Evil 2 and 3 just didn't have as good graphics, which lowered the scaring, but they were still important parts to the story, my Recommendation would be to just play them all for just the story, if you want to unlock everything, have fun, but you'll be busy for a while, only one I haven't beaten is Code Veronica, but I have it for my PS3 and I haven't heard of REmake... whatever that is
I would say either Resident Evil or Resident Evil 2. Resident Evil is, of course, the one that started it all (Zero helped it), and the art direction is quite dark and beautiful. Resident Evil 2 managed to create a memorable atmosphere for me and was pretty scary as well. As for the pre-rendered backgrounds, Code Veronica is the only game that isn't pre-rendered; the rest are. If you want the longest game, Resident Evil 1 or Code Veronica are your candidates (Code Veronica probably had the deepest story while REmake is more beautiful). Resident Evil 2 had a lot of variety in enemies, levels, and atmosphere; the problem is that it's pseudo short: you play either as Leon or Claire, which have their own paths throughout the game clocking at 3 hours per game. That means you can play the game 3 times since there are 3 different paths. The graphics are outdated though: it's a nearly direct port of the PS1 version rendered at 480p (while using the same backgrounds). They all have tank controls, but it's not too bad. You just need to know that your character on the screen will turn left or right, regardless of the camera angle. Also, the D-pad will probably suit you better than the analog sticks.
I actually liked both RE0 and Code Veronica very much. Zero was a very unique experience for me that I enjoyed exploring it (but I hate the slow loading times that break the flow for me). Code Veronica is very good in which the story kept me interested, I enjoyed the enemies, the polygonal details make me nostalgic since I played it when I was like 9 years old.
I was hardly impressed with RE5. I just think it was too radically departed from the series. It didn't drive me to anticipate any moments in terms of horror and the monsters were hardly creative. I think I have an idea of what Capcom was trying to do, but this game fails to give me a foundation of its existence. The story was nice, but the gameplay aspect wasn't there for me.
For gameplay, too many iconic aspects of RE were stripped from RE5: locked doors that drive my curiosity and anticipation, exploration, intimidation, European or utilitarian or city architecture, and memorable monsters.

Resident Evil Re:make is definetly the one to play on the Gamecube. It takes the cheesy RE1 (which is good cheese not bad cheese) and makes it so much more by using what they have learned from games in the later series, making it so much harder and adding a lot of refrences to the rest of the series.

Either Zero or One. I must say that Zero is a quite underrated title...
Tell me about it. Zero was good, but not great. It felt more like a side game, Marcus's wizard anime get up and operah singing were totaly riduckulous and those Frog bio weapons were practically useless and weren't a threat at all. Talk about a semi-weak 3rd act.
Yet I enjoyed it more than Code Veronica that's for sure.
I have never played Zero, I should maybe sometime but then again I dont know about the older Resi's anymore. I was playing Code Veronica around a year a go or so but I just got burnt out. I made it to the Secret Lab or whatever it is and then I was like ok, I am done with this Sega Saturn left over piece of boring decaying scrap of thanksgiving turkey.
RE4 is a game I can always go back to though. The pointer controls were Snickers-like satisfying I thought. It was my next Wii game after Corruption so that control style was so fresh and fun. I thought RE5 was alright. I wouldn't ever bash it and didn't have the Sheva problem people talk about it. I just used her like a pack mule. Lost in Nightmares was really cool to see some classic RE meets HD. Though I am not high on the older RE's I would look foward to Revelations if I had a 3DS and will be interested to find out what the next console version will be like.

It might be a personal opinion, but I think you should play Resident Evil on the Gamecube. I loved the original and I thought the REmake did it justice. Also, the first time I played it I didn't know the new twist (no spoilers)!
I love RE2 and RE3 very much, and it's great to have them on the GC, but if you're looking for a GC-specific title to play then the REmake and RE4 are probably your best bet. I have RE4 for my Wii, though, and I thought that was an awesome way to play the game.
I'm not a fan of RE4's style of play, but it's a fun game nonetheless. I basically hated where they've gone with RE5. Total Gears of War styled action clone. They even jacked Chris up on 'roids so he'd look like the characters from those games. I've forced myself through most of it, but I can't seem to finish it. It just doesn't do it for me.
I really like Code Veronica. When I first played that game for Dreamcast I absolutely loved it. I know you lose the pre-rendered backgrounds, but I still really enjoyed that game. I have it for PS2 now (Code Veronica X), but I have yet to play it. If I were ever to go back and buy a DC, it would be for that game. I just loved the experience I had when I played it "back in the day".
Just to chime in, even though it's off-topic: I'm very hopeful that Revelations actually brings back the old school Resident Evil style, with the new precision controls of RE4 and RE5.
