Double Dragon Advance. Had all 4 levels from the first arcade game, some from the second arcade, and even the SNES game. The best of four games but it's greatness was wasted on gamers too young to know about the franchise. Tons of moves, new combos, enemy juggling, amazing music. Seriously, someone post some Youtube videos of that. Especially the trucking level.
I found Lord of The Rings Two Towers and Return of The King on the Gamecube really fun, especially RoTK's co-op.
I also had a lot of fun with Transformers Revenge of The Fallen online(on X-box 360),that is until the DLC,one of the DLC characters was really broken and cheap(Jazz).
@SilverBaretta: It's amazing. If you can find a copy, definitely snap it up, you won't regret it...

After having now completed Thor: God of Thunder (DS) and Batman: The Brave and The Bold (DS), I have full confidence in WayForward's treatment of licensed games! It's a shame how underrated these titles are... I'm working on Aliens: Infestation.
I can't wait for Adventure Time!

I don't know if it's underrated, but I really enjoyed Bleach: the Blade of Fate (DS) by SEGA.
It pretty much felt like a Street Fighter clone (with Bleach characters), but that wasn't a bad thing, and the sprite based graphics were beautiful. I even believe NP gave it an 8/10 or 8.5/10.
The only thing that was a little inconsistent were the "bankai" transformations. Some were giant one-off attacks (Renji & Tousen for example), while others were limited transformations that gave you the full range of the character's "bankai" abilities (Ichigo & Toshiro for example. I enjoyed these more).
Currently Playing:
Switch - Blade Strangers
PS4 - Kingdom Hearts III, Tetris Effect (VR)

I have the sequel, and I'd say it's more Fatal Fury than Street Fighter. They're both made by Treasure (who is a phenominal developer) who also worked on what was easily the Mega Drive's best fighting game, Yu Yu Hakusho: Makyo Toitsusen, which was a very similar game. I just played through said YYH game, and I still think its pretty great. I should play through Bleach: Dark Souls again soon.

Spongebob:Battle for Bikini Bottom. Nice music, good voice acting in most parts, and excellent gameplay. Anyone with a gcn should give it a shot.

It's also on PS2 and the Xbox. It's on PC ( but it's a point and click game) and GBA ( 2D platformer). The console versions have the same premise of Mario 64, with some Banjo Kazooie thrown in. Collect golden spatulas to open up new levels and have a ton of moves like in Banjo Kazooie.
The Spongebob Squarepants Movie Game ( PS2, GC, Xbox and GBA)
The console version is similar to Battle for Bikini Bottom. The GBA version is a WayFoward platformer, kind of easy but really enjoyable.
Spongebob Squarepants Creature from The Krusty Krab ( Wii, GC, PS2, )
It's more straight forward then the previous two as it's just level to level. No collecting X amount of Y items to unlock a level. The only replay ability are these gummies that unlock characters in the last level. I'd say go for this along with the other two Spongebob games.
Goof Troop ( SNES)
I know this has been getting more popular due to the Game Grumps playing it. But to sum it up quickly, if you like top down Zelda games like Link To The Past. You're going to love this. It's straight forward though. Puzzles here and there but no quest or world map. Just level to level, think Zelda Four Swords.
Probably been said, heck maybe even I said it, but... Star Wars Episode 1 Racer. That was one excellent racing game.
episode 1 racer was awesone, i wish that would come to the VC.

The Simpsons Arcade and TMNT Arcade are definitely not overlooked. They rereleased TMNT very quickly into XBLA's lifecycle and it sold very well. Maybe it's not as lawded as TMNT IV, but still. Simpsons Arcade I thought was getting a rerelease, too. At the very least, I've heard a lot of people talking about it.

The rest I mostly agree with, though.
The Simpsons Arcade game was re released on XBLA and the PS3 store about six months ago. As for the TMNT games Mickey is right there I can't see how they are overlooked especially since In Time was a 3D remake of the original. Of course they were pulled from XBLA and the PS3 Store (along with the NES TMNT from the Wii VC) but that was due to licensing issues with Nickelodeon not because they were overlooked.
