Surprised nobody has mentioned (Or maybe somebody did and I missed it ) Excitebike 64. It's not perfect, but it's a pretty neat take on the Excitebike formula in 3D.
Mickey's Speedway USA. It gets a lot of hate for being a Mario Kart clone, but in my mind it is much better than Mario Kart 64. It was a RARE title made near the end of the N64's lifespan. I started playing it because it was the only N64 game I had with me at one point. I ended finding all the secrets hidden in the tracks to unlock the final cup without using the internet to speed things up. I also finished all the cups on the highest difficulty. By then I was playing the game because I liked it.
The audio and visuals are both very nice, controls are spot on and the track design kept things nice and fresh. The best bit is its CHEAP. I looked online and found it for just over $10. I'm not getting paid to recommend this site, they're very good. The game is well worth your money if your prepared to give it the chance it deserves.
I spent a lot of time with F-Zero X and WWF No Mercy. I liked all the Star Wars games, Battle For Naboo is fun. Everyone should agree that Goldeneye and Mario 64 were classics. Mario Party 1 was great but destroyed your controller and hands at the same time. I think the analog stick's low quality is why I quit playing my 64. It gets loose and less responsive over time.
Pilotwings 64 was my favourite, the chilled atmosphere the music created - great memories
Still waiting for a VC release, I have no idea why it has been missed
I would also like to experience a non PAL version of this game. UK version had awful borders
