@64hario Might not have used an emulator at all, could've captured it directly from a N64 or taken the footage from someone else doing that.
However if you want a good emulator (even though it isn't legal and I wouldn't recommend using any emulation) I would say Super Mario 64 Online is a pretty good one. (Again I'd highly recommend buying it for $10 if you own a Wii U on VC or even buying the N64 and the game online somewhere)
