Donkey Kong Country Returns Kirby's Epic Yarn Kirby's Return to Dreamland Mega Man 9 Mega Man 10 New Super Mario Bros. Wii Rayman Origins (I haven't played this one yet) Sonic Colors (Wii version) Sonic Generations (PS3 / 360 versions) Super Mario 3D Land Super Mario Galaxy 1 Super Mario Galaxy 2
There's also Warioland and the Kirbys. If you indeed include the 3D platformers, then there's no real contest. The Super Mario Galaxys are the best games ever made, especially in the level design sense.
Not only does the 3DS come with an SD card, but it also happens to come pre-installed with one, additional dimension.
Donkey Kong Country has always had the best level design ever. 'Returns' is no exception. I never compare 2D and 3D level design so for 3D I'd say Super Mario Galaxy 2.

I always thought the Wario Land games had average level design, and from what I played of Wario Land Shake It, that game is no exception.
I found DKCR to have awesome level design. It's just the waggle to roll really ruined it for me. Still enjoyed it, but the controls were always on my mind.
Haven't started Rayman yet, but the demo looked promising.
Also, I found Wario Land ShakeIt to have awesome level design. The design of the levels to work backwards and forwards worked quite well.
Sonic Colors goes downhill after the first levels, so its not a consistent game at all and Sonic Generations, well, its just a bad remake.
Have you played Sonic Generations? I found the 2D and 3D hybrid gameplay to be refreshing. Same with Sonic Colors, Sweet Mountain is my favorite level ever.
Sonic isn't just about holding forward. You need quick reflexes and proper use of the boost skill to maneuver around obstacles.
And I wasn't talking about graphics, I'm talking about actual level design.
Level designs for me, are a toss up between Kirby's Epic Yarn and Rayman Origins. Those two platformers look like they've had the most love put into each stage, but I would have to go with Rayman Origins for the sheer uniqueness and personality every level exudes.
You wouldn't be dying if you spent time learning the timing of what's all happening on screen, which is a direct cause of the game's interesting and thoughtful placement of enemies. If you progress without taking time to think about a situation the game gives you, then Mutant Mudds is going to hand you plenty of deaths more so than most games usually would.
