One of the biggest titles for me was True Fantasy Live which was an in development MMO JRPG by Level 5/Microsoft Studios for the Orginal Xbox. The game eventually fell apart and cancelled 4 years into its development. The Level 5 guys said that Microsoft was inexperienced with japanese developers, whlle i've heard others say that Level 5 used this barrier to use TFLO resources on what would become their other games. While the game failed what's interesting is that alot of its ideas would eventually trickle their way down Level 5's outut with White Knight Chronicles, Fantasy Life, and Dragon Quest IX.
A second game was Fortress a FInal Fantasy XII spin off that would have been a open world game in the vein of most WPRGS in the world of Ivalance.
Unsure why it was canclled but what Square really needed a the time was more than two viable franchises. (but that's discussion for another day).

Okay, I know we technically got it, but I would've loved to have seen Earthbound 64 in it's final build. Though some of the character models looked a bit...off to me.

We never saw much of it, but it was in development at one point. And it was going to feature co-op multiplayer with Luigi as a second playable character.

TimeSplitters 4. I loved TS: Future Perfect, but then Free Radical exploded, so we ain't getting that. There was definitely a second game I was thinking of, but I forgot it while scrolling through the thread. It'll haunt me forever.
Rodea the Sky Soldier and Donkey Kong Racing. Also Rare's old project Dream, but what it transmogrified into (Banjo-Kazooie) is probably way better than anything else that could have been.
