Even though I'm a huge Nintendo fan I still like to try other consoles.Any Nintendo like games you can think of. I only really liked Sonic games when it comes to Sega but I will likely get Jet Set Radio.Games with gimmicks is what I can get into aswell.
Power Stone 2,Ready 2 Rumble,Samba De Amigo,Skies of Arcadia,Crazy Taxi 1 and 2,Chu Chu Rocket and so much more.Fantastic console,I'd love to play on one again.
Since you're UK then you can get Rez, Headhunter and Shenmue 2 which didn't get an US release and is often left off the yank's best Dreamcast games list. Otherwise it's the usual suggestions of Shenmue, House Of The Dead, Crazy Taxi, Marvel vs Capcom 2, Jet Set Radio, Soul Calibur etc.
I enjoy, among others, Skies of Arcadia, 24 hours, house of dead 2 (but only if you have a crt tv) Armada (but only if you are able to play imports or if you are US) Looney Tunes Racing, Shenmue, Virtua Tennis, Quake 3 arena (especially in local multi) and there is a massive other side which cannot be mentioned on these forums. Check out the community on the web, if you want to know more.
I think people forget about the massive library of fighters the Dreamcast has. You should get what you can find if you're into that kind of stuff (I know lots of people aren't).
OK... there's Capcom vs. SNK, Marvel vs. Capcom 1 and 2, Project Justice, SoulCalibur, Street Fighter III Double and Third, Street Fighter Alpha 3, Virtua Fighter, lots of stuff.
Oh yeah and Power Stone. You guys in Europe missed out on neat SNK stuff like Mark of the Wolves and King of Fighters.
Non-fighters? Everything that's been said so far pretty much lists the definitive stuff on the system.
Well, since you're new to the console, I think it would be wise to start with the cheap "classics" rather than invest big money on lesser known titles. This is probably not a good time to buy games like Shenmue (prices went up a lot after 3 was announced), Skies of Arcadia, Street Fighter 3, 2D fighting games and shmups in general.
To start with, I would recommend:
Soul Calibur (3D fighting)
Metropolis Street Racer (simulation racing)
Virtua Tennis 2 (tennis)
Toy Commander (action with toy vehicles)
Jet Set Radio (skating)
Crazy Taxi (arcade driving)
Resident Evil CODE: Veronica (horror)
Sonic Adventure (3D platformer)
Tony Hawk's Pro Skater 2 (skating)
These are all good and won't cost a fortune.
Then you could venture into more expensive games like Jojo's Bizarre Adventure, Grandia II, Skies of Arcadia, Shenmue I and II, REZ, Power Stone 1 and 2, Maken X etc.
I would also buy a disc to play import games because there's a lot of good stuff from the US or JAP that didn't get released in Europe, and sometimes the three regions have huge differences in price. I think you can download one for free but I'm not entirely sure. Just so you know: if you use the disc you won't be able to play multiple CD games (like D2 or Resident Evil 2) because you can't swap the discs.

Didn't see San Francisco Rush 2049 mentioned by anybody yet. That's another excellent game. For its short time on the market, the DC has an insanely good library. I don't know if PS4, X1 and Wii U combined will touch it.
