Bioware made THE best Star Wars game there ever was. When was the last time Lucas Arts made a great Star Wars game? This is an improvement in my opinion. KOTOR III and a Jedi Knight game by DICE please.
Jedi Knight would most likely be by Visceral. They could do a good job with it, too. Not all their games are as weird or eerie as Dead Space or Dante's Inferno, either, though their experience with those games could certainly benefit the game greatly.

Bioware has been garbage since joining EA. The other two developers are good but still bound by some of EA's idiotic ideas. I'm not a huge Star Wars fan so this won't effect me much but I hope for the sake of the fans that this awful publisher doesn't totally mess things up like it usually does.

Um, Maybe in your heavy baised opinion, but metacritic and the various awards their recent games have garnered beg to differ. Even Dragon Age II, while subpar, was far from terrible, and certainly better than what you average western RPG developer puts out. I highly doubt they'll put out a bad game, regardless of EA's involvement. (I also question how you think EA "messes things up" all the time, but I'm sure your answer will be as dated and unrtealistic as all the other anti-EA garbage I've heard. I mean, I know they're not perfect, but that seems to be exactly what people expect them to be)
Yeah EA's policies are terrible but they tend to put out objectively good games. Even movie based ones, anyone remember the hack n slash LOTR games from a decade ago? Those were great.
Yeah, Bioware is sadly not the same. And brace yourselves for the microtransactions, unless you're into that kind of thing. Hopefully quality storytelling trumps online pwning, but it's a longshot.
