What do you think are the best remasters and remakes of all time. My opinion:

Best Remakes

1. Ducktales Remastered (which is ironically a remake despite having remaster in the title)
2. Resident Evil REmake
3. Kingdom Hearts Re: Chain Memories
4. Pokemon HeartGold/SoulSilver
5. Super Mario All Stars

Best Remasters:

1. Persona 4 Golden
2. Kingdom Hearts 1.5 H.D Remix
3. Team Ico Collection
4. Sonic CD HD
5. Marvel vs Capcom Origins

The only one I'd name that isn't on your list is the Metroid Prime Trilogy. While the first two games became substantially easier to play with pointer controls, they were more visually polished and stable.

Wind Waker HD was done really well. I loved the improvements.

Pokemon remakes(FR/LG and HG/SS) were well done as well.

You're missing what I'd consider the 2 best! (I'd say RE:remake would be third)

1) Ocarina of Time 3D
2) Black Mesa

The Ocarina remake is what I'd consider a near-perfect execution. They spent a lot of time making it look like a modern game, but left enough of the original code intact that it still feels like the same game.

It's dangerous to go alone! Stay at home.

Not many posts, but I can't believe nobody mentioned Metroid: Zero Mission yet. It's so much better than the original game.

Resident Evil REmake is a great one, and I'm also partial to Metroid: Zero Mission which is a fantastic remake of the original game.

Resident Evil 4 also might belong in the conversation as it saw a number of improvements (GameCube -> PS2 -> Wii -> PS3) I've never played the final HD remake, but heard it keeps the great control options of the Wii version, all extra content, and offers improved visuals to boot. Has any other game seen so many improved re-releases in such a short span of time?

I loved the original, and still debating if I should pick it up for the 3DS though. But I have played a few levels.

the remake is kinda meh immediately to me because the voice acting isn't cheesy enough.

Best remake would be Metroid: Zero Mission. In some ways it's a terrible remake but its increased focus on linear gameplay and completely missing why people like the first Metroid doesn't matter because the game is actually fun, unlike the original Metroid. It's also a remake of the first game in the series and is the easiest game in the series, which fits perfectly for me (which is why I'm glad the Zelda timeline ends with the NES games ). But yeah, it's waaaaay better than the original so it should be considered the best remake.

But the best games I've played that are remakes in some way would be Super Mario Advance 3 (remaster, remake...barely not a port, whatever) and SoulSilver. SoulSilver remade my favorite Pokemon games growing up and made them as good as when I was 10, which is what a good remake should do. Also, Chrono Trigger DS.

Let's see, my favorites (that I've personally played) include:
Pokémon LeafGreen (nice update to 3rd gen standards along with the addition of a new island chain)
The Legend of Zelda: Link's Awakening DX (doesn't really add much, but it didn't really need to)
StarFox 64 3D (a remaster of a remake, I think it's worth it just for the abilities to immediately replay levels you've beaten and save between levels, and you can't forget the stereoscopic 3D)
Super Mario Advance 2: Super Mario World (reducing the difficulty by knocking a powered up Mario back to Super Mario and giving Luigi his SMB2 attributes makes the gem even better)
Ace Attorney: Phoenix Wright (already an excellent remaster of a Japan-only GBA game, I'm looking forward to the 3DS remaster of the entire original trilogy)
Metroid Prime Trilogy (replacing lame dual-analog controls with intuitiive motion controls for two of the games, 'nuff said)
Final Fight One (Still no coop play, but at least it has all 3 characters, all the levels, and much better performance than the horrible SNES port. Oh, and some unlockables, too).
Space Harrier 3D (now the definitive version of the classic arcade game)
Sonic the Hedgehog 3D (another excellent update by Sega and miles better than that god awful GBA port)

This reminds me, I still have to try out "Moon Chronicles."
