Its tough to find a sick trilogy without just picking 3 consecutive games in a franchise, like Mario 1/2/3 or Final Fantasy 1/2/3. Of TRUE trilogies, I'd say my favorite is probably the Metroid Prime trilogy, but I'm sure by the next Metroid, that will have grown out of being a "true trilogy" too.
So many to name, but I really love Suikoden I-III and I'll drop God of War on here because I know when I finally get my hands on 3 and devour it, it will rank way up there.

I would say the Densetsu no Stafy trilogy, or first three games if you will. Technically it would be a trilogy since the first three games are all connected by characters and story (though 4 and Taiketsu! Dire Kaizokudan were separate stories).
