Topic: Which is the better game for me: Super Mario Odyssey or Kirby Star Alliance?

I didn’t enjoy Super Mario Sunshine at all (it was too difficult and too easy to get lost in the stages) and I thought Mario 64 was just okay.

I really enjoyed Mario 3D land (for 3DS), Sonic Mania and Sonic Forces (even though Forces wasn't that good).

The demo of Kirby Star Alliance was good, but it didn’t seem compelling. I've watched several Mario Odyssey videos and although it's nice, it also reminds me a lot of Sunshine which is off-putting. (It seems like a cross between Sunshine and 3D land).

It's too bad there isn't a demo of Odyssey (I know certain stores have one, but that's not an option for me).

It has no relation to 3D Land. It's the most open 3D Mario next to 64 and Sunshine.
You'll probably enjoy Odyssey really though, Moons are everywhere (there's over 900 I think) and it's actually easy to get to the core one that's connected to the game's "story" progression. There's also an assist mode that gives you arrows to tell you where to go if you need that, though it also handicaps you with damage and falling.
If you like 100%ing games though, you're gonna have a hard time with some moons. You can also teleport between different parts of the world via the checkpoints you touch the first time round.

Well, considering I didn't like Mario 64 and HATED Mario Sunshine but liked Mario Odyssey pretty well while it lasted, I'd go for Odyssey.
Kirby Star Allies is a very different, very slow kind of platformer and I've never been a fan of the series. The fact that you like Sonic makes me worried a bit that you'll find Kirby too slow.

Also consider I'm in the vast minority on my feelings towards Mario Odyssey. Many think it's the best 3D Mario out there. I prefer 3D World myself and put the Galaxy games in second and third place, Odyssey is the fourth best 3D Mario for me.

Super Mario Odssey has many moons that are extremely easy to obtain you can get to the ending easily but you miss most of it that way. Super Mario Odyssey is fun if you want to explore and see many things, not necessarily everything but if you don't want to get lost in the stages I'd say it is absolutely not for you you are going to miss everything it has to offer and it would probably be not fun to play it for you.

Kirby is quite easy but Odyssey can be at the same time even easier and more frustrating if you try to play it in a straightforward way so probably Kirby would be a better choice for you imho

Mario Odyssey‘s kingdoms are full of moons to collect and finding your way around the place is made easy by the optional Assist Mode and visual hints.

Kirby on the other hand, Kirby Star Allies to be specific, is VERY easy and short. Plus, given your mentioning of Sonic games, you won‘t like Kirby. It‘s more of a relaxed and easy platformer.

I‘d heavily recommend Odyssey and if it‘s just because you‘ll get more bang for your buck from it.

Thanks for all the suggestions. I quite liked the relaxed pace of the Kirby demo, it was a nice change of pace from Sonic. The only thing that was a little off-putting was that you combine the abilities of Kirby's friends to go past obstacles, but then the only thing behind the obstacle was a collectable. It didn't seem very rewarding for the effort made.

Mario on the other hand is very rewarding for making the effort to explore. It's just the openness in the videos that looks off-putting to me. It reminds me a lot of 64 and Sunshine which I didn't really enjoy (especially the latter). I've never enjoyed wide open spaces, even in the Sonic games (e.g. I didn't like the Adventure fields in Sonic Adventure and Sonic 2006).

Maybe I'll have to get both, as they both having things I like! But then I'm not sure which to get first! I wish they had a demo for Mario in the eshop as it would make things easier.

Maybe watching a let's play on YouTube can ease your mind? It's not the same as playing a demo yourself but that way you'll get a better idea of the worlds and gameplay in Odyssey.
