It's impossible. Apparently there are yellow and light green blobs, and blue and purple blobs, but I can't tell them apart and keep losing. This sucks because I'm unable to progress due to my disability. I read that the game on which this boss stage is based has a colourblind mode. I doubt that will be added to Sonic Mania though, so how do I progress?

It's a bit subtle, but all the beans actually have different shapes and eye positions.
Like...
Red -> leaning left.
Purple -> leaning right.
Blue -> has a "tail".
Yellow -> has a "horn".
White/Junk -> no special traits, a simple blob.
They do change a bit when they form clusters, but their shapes are still distinct from the other colors. Try to use that.
Modern games in the puyo series made each color have a different expression, too, but this is based on the classic game where they all had their eyes wide open.
I've no idea if this will work but in the Switch settings you can invert display colours. settings > system > change display colours.I'm not sure why that option is even there but if it helps you beat the boss it'll have served a purpose.

This is all starting to sound like people playing the Candy Crush game show. Oh yeah, that's a thing. Teams of two, usually shouting colours to match at each other.

@BLP_Software I don't know I have seen it in CoD Black Ops 3 and MWR, Also in Doom, Overwatch and Battlefield 1. I belive it's also in GTA V as well. Might be just a FPS thing though.

@the_shpydar: There is a rare form of colorblindness where the individual can only see colors in different shades of black, gray, and white (Achromatopsia). Partial colorblindness is much more common.
