Hey, So I am from Belgium and i speak Dutch and English. My nintendo switch e shop is in French and I can't find out how to change it. Can anyone help me with this? My console language is English.

Well, I don't have a Nintendo Switch, but I do have a European New Nintendo 3DS with Italy set as the country. No matter what language my system is set to, the eShop is displayed in Italian.

So maybe the Nintendo Switch eShop is like that too. Yet it seems odd to me that the eShop would have only French as its language if its country is set to Belgium, unless the Nintendo Switch has no Dutch language option at all (unlike the New Nintendo 3DS). Check if there's a settings option within the eShop, and if that includes the option to change the language (which I imagine would be an exceptional case specifically for the Belgian eShop). If there's no option like that, try changing the language on the system to Dutch, if available, and see if that also changes the language of the eShop.

Nintendo only supports a few languages per country for their eShop.
For Belgium they only support French and Dutch for the eShop. So if your Switch language is set to something else than French or Dutch, it sets the eShop language to a default language that is supported in the country where you are.

French used to be the default language in Belgium, so if you console was in English or any other unsupported language, your eShop would be displayed in French.

Yet since a few days, they changed the default language to Dutch.

I think they should simply offer us the choice to choose the preferred language amongst the supported one when the console language is not available in the eShop supported languages for that region.

But hey, Nintendo like to choose for you to make it a "better" experience. Anyway, now I can either switch my console to French which I understand enough to make purchases on the eShop but then I have most games in French (which is poopy), or I can keep my console language in English, enjoy my games but then I don't understand anything to the eShop...

Nintendo Support solution is to change the language before to visit the eShop, reboot, then do it again before to play games.
