MK8D is the best Mario Kart game ever. My only complaint is it's the same Mario Kart they've been making for years, just bigger and prettier. But you love Mario Kart so that probably isn't a problem.
Splatoon is fantastic. A shooter that can be fun if you're a noob, or if you've been rocket jumping since the mid 90's. My only complaint is there is no split-screen, but it sounds like that isn't a concern for you.
ARMS is my personal favorite thing on Switch. It's a simple, fun, goofy fighter that reminds me of the stuff Capcom released on Dreamcast; Power Stone, Project Justice, Tech Romancer, Heavy Metal: Geomatrix. However it doesn't have a ton of content, and is best when doing multiplayer. Might not be what you are looking for, but I love it so much I had to bring it up anyway.

Unless you really like driving games above any other type of game, I'd say Splatoon 2 - I can't think of any multiplayer game that's more enjoyable to play with complete strangers. Highly recommended. It has a proper single-player campaign too, unlike Mario Kart, which is great but is mainly just about playing against others. Also, Splatoon 2 is pretty much unlike any games on other systems.
But Zelda: Breath of the Wild would be my first choice, regardless.
Personally I'd suggest Splatoon 2, it's the fuller single player experience & every online match feels different. While I'm an old school Mario Kart, the online matches can get repetitive and frustrating fast (thanks Blue Shell). If you can borrow Splatoon from someone first, give it a try!
