At least it sounds like you didn’t run into the co-op bug I did, where P1 showed up on bottom instead of top and vice versa, and each player was dragging around a copy of the scenery with them making the game confusing and nauseating. Fortunately if anyone gets this, it’s easy to fix. Just close the game completely and reopen.
I ran into another glitch in the same vein. Maps I was playing in, the scenery elements that weren't the ground (like keep walls, misc rocks, etc) would sort of 'jiggle' as I moved around. Was also fixed by restarting the game, though at least it was playable still (just annoying).
This game has some really strange graphical bugs.

So it sounds like the multiplayer is a bit buggy, which I’m fine with. However, I’m interested in hearing if the enemy count is any better. I felt the number of enemies in Fire Emblem Warriors’ multiplayer was terribly low, but the Wii U’s Hyrule Warriors wasn’t that bad. Player One had a fair number of enemies while Payer Two didn’t get as many (but substantially more than what Fire Emblem Warriors offered). Has the Switch version improved it at all?
Ive been loving this mostly in handheld mode and I’m not sensitive to the frame rate dips.
But it seems to drain my battery faster than the rest of my Switch library.
Same for me on both points. I've been playing mostly handheld outside of playing coop worth the kiddos. Perhaps I don't have an eye for it but I haven't noticed any dramatic slowdowns. And the battery drain is definitely something I have noticed. Played for about half an hour last night and the battery dropped by almost 20%!!
Just picked it up. The splitscreen wasn't as annoying as I'd anticipated, but I would still really appreciate a vertical option instead. And what's with P1 needing to pick everything for P2? It's a minor inconvenience at worst, I just wonder why they chose to "fix" that of all things.
So, should I wait to tackle the story offshoots (i.e. Linkle) until I complete the core story, or does it matter (even though it unlocked at an early part, is it much more difficult than the mission it spun off from, or around the same difficulty)?
Anyhow, I've beaten the 4 "prologue" missions. It's good, but I think noticeably more challenging than Fire Emblem Warriors was at this stage (that may be in part due to the lack of QOL improvements FEW brought in, though). Maps are pretty impressive though (I think they're more complex in layout than most of FEW's maps, and certainly more imaginative).

You can play the side stories as soon as they become available, honestly. Linkle is a blast to play.
@Joeynator3000 I'm surprised the laughs bother you more than the ocarina. DOOT DOOT DOOOOT, ad infinitum. His unlocked combos are actually pretty decent though, imo.

Before I start raging, what's the best way to deal with those "Defeat this many enemies before the time runs out." missions? Especially the ones where Gohma appears, because holy crap those were infuriating. lol

Keep it PG-13-ish.
Gohma is fast little devil. However he's usually pretty good about exposing his weak point, so I usually kill him if the kill amount is high enough to end up spawning multiple big bosses (one you can ignore, more than that is a problem).
Also if you want to speed things along, and you have the magic, pop into focus spirit and press A to do that finisher. It automagically exposes the weak point so you can get some whaling done. Also also another use for magic in those missions is to press right stick and use FAIRY MAGIC. It kills enemies around you including un-rendered ones.
I've been making good progress in the Windwaker map. I've FINALLY gotten Young Link's level 2 weapon (that was infuriating because I needed to divert to like 4 different places for items on the way) and I'm working on getting everyone else's level 2 weapons.
Also I never used this weapon in Legends cause the downgrade was disappointing but Lana's summoning gates are really fun.
If you add me, I need to at least know you or I won't add you back.
Cia's story missions are pretty hectic! Just played one where I had to deal with two Ghomas and that plant boss. Oh, and Wizzro turned against me as well. the commander was Ganondorf

Switch - Blade Strangers

This is very outdated, so please forgive me for my ignorance since I haven't played since the early Wii U version, before the DLC even.
But: is that ruppee glitch that involved gohma still a thing? I remember it being an exploit. If not, what's the easiest way, exploit or not, to get rupees, cuz I do not want to train everyone individually.
