Can I use it on the nintendo switch? I bought the 3ds mario kart edition for my son which came with the code for the game but I already had bought the actual cartridge game on my 3ds.

3DS games are not compatible with Nintendo Switch, so no. 3DS games are only compatible with the 3DS family of systems (3DS, 3DS XL, 2DS, New 3DS, New 3DS XL, New 2DS XL).

You can just redeem it on the 3DS it came with and use the nintendo save file transfer tool (download from the eshop) to move the save data from the cartridge to the digital game.
Then you can keep the cartridge as a backup plan or sell it or something.
