I honestly think I will start out with it docked, but I can absolutely see myself watching YouTube videos (Kinda Funny, Funhaus etc) while using it as a handheld.
I consume a decent amount of content that doesn't need 100% of my attention (including sports) so I think the Switch being playable in handheld mode will be perfect!

I'm figuring 70% undocked, 30% docked, if only because there are games that I'll mostly prefer playing on the TV (Splatoon 2) and there will be times that I'll need to dock it to charge, but will want to continue playing. Otherwise, I'm away from the house enough that I'll make full use of the portability. There's a reason I don't play my PS4/Wii U as often as I play my Vita/3DS.
The Wii U GamePad had a much less impressive display, and I still played Off-TV mode quite a bit on that.
My gaming consoles are all setup on my 57" TV in the basement, but I don't get to go down there and play as often as I would like.
I have only recently discovered the joys of going to bed early (after getting my son to bed) and playing my 3DS in bed, so I expect most of my usage will be handheld.
As a bonus, my wife said she prefers when I play 3DS in bed instead of turning the TV on in the bedroom, so I have yet another reason to play handheld.
That is really difficult to answer. I think it will depend on the game and the circumstances at any particular time. Bigger games like Zelda Breath of the Wild and Skyrim will probably see equal parts docked and portable whereas shorter games or those like Snipperclips will be docked.
I am unsure about titles such as Arms or Splatoon 2 though, they may have to be entirely docked but will see how that works out when they release.

I'll probably leave the system docked most of the time, but I will occasionally play it around the house. If I end up changing jobs, this may change though.

I think the better question would be "what is the Switch replacing?". How you play the console doesn't really matter that much in the end. What matters is what devices you have that you won't be using as much. Or what devices you don't have that you're less interested in getting now.
As it is I can see the Switch replacing three devices. Obviously it replaces the Wii U because it does everything the Wii U did but better. So I'll be using it in place of my Wii U for basic off-TV play and Nintendo games on the TV. But it also replaces my 3DS as a device for gaming around the house and travel. Because it does those things better than the 3DS.
Lastly it's also a big enough and high enough quality screen that I don't see the need for a tablet anymore. I had been looking at getting a new tablet for a while but when I think about it? I only use tablets for watching videos on a screen that's bigger than my phone when I don't feel like using a TV or monitor. When it gets Youtube and Netflix? The Switch does that. Especially if I can also view Twitch streams via the browser.

I can't picture myself playing games on it other than on my TV. That's when the machine is really going to shine. I may take it on the go, but that seems very unlikely.
I don't think that's a better question. Why does it need to replace anything? If anything I'm just adding it to my collection of games/entertainment . I can't exactly play Zelda on my Xbox. I was more curious to see how people are going to use it.

It'll inevitably replace something. If you buy a full retail game for it and spend a couple of weeks playing that game? That's money and time you're not spending elsewhere. Do that on a regular basis, which you will, and you're replacing the other device.
What form I'm using the Switch in ultimately doesn't matter. If I said it depends on the game and I might to a bit of both? That tells you nothing about the way I intend to use it. If instead I say it's going to entirely replace my Wii U, largely replace my 3DS, make a tablet less appealing and that I'll use it alongside my PC? You'd know exactly how I intend to use it.
