Specific tracks: Megaman 5: Waveman's stage, key-change after repetition of first part; 100 point Time Trial stage theme on 9; tie between Riddle and Beginning from CV3.

As for recent game music that takes the 8-bit form, I'm quite fond of much of the music used in the Art Style games.
Everyone praises Pictobits for that, since it's a big focus of the game, but has everyone heard the Staff Credits music for Aquia?(Versions 1, 2, and 3--the music is different depending on which shape you beat.) It's truly great, and may or may not be strictly 8-bit, but it is very close in its style and synth sounds.
