The Wind Waker Link might be my absolute favorite, others I like are Ganondorf (of course), Midna and Skull Kid.

I gotta go with the Postman. Majora's Mask really got me loving how he always sticks to his duty. The world was about to end, but he was out there delivering, risking it all.
I also have to agree about Salvatore from Wind Waker and PH.
Side note: I have never enjoyed any of the sidekick characters. They all seemed to know the worst time to interrupt my game by telling me something I either already knew or didn't care about.
